Pan or the betel leaf is a specialty of the city. There is an entire market for pan, known as Pan Dariba, where huge pan leaf transactions takes place. Several varieties of leaves are available -- Belkuli, Bengal, Jagarna, desi, maghai and more. Most of the leaves come from Bengal, Uttar Pradesh and Madhya Pradesh. On arrival in Varanasi it undergos a whitening process, which makes the pan more palatable.
